INGREDIENTS
2kg red snapper
3 potatoes

For the salt crust:
1.5kg coarse salt
500g fine salt
2 egg whites

For the sauce:
200g sour cream
1 tbsp of oil
Parsley
Salt
Pepper

Dry the fish well, stuff with rosemary, garlic and parsley, cover with a crust of salt. Bake the fish and potatoes for 40 minutes at 390°F (200°C).

  1. a beurre blanc sauce would have been good with the fish, and a pomme puree rather than a jacket potato

  2. Could you please tell me What are you mixing with the salt before using it to cover the fish?
