This looks like a single serve – I find it super interesting that a lot of pasta meals are cooked in demonstration in this way. For example cacio e pepe I see often as a for one portion. For these types of dishes where pasta water is added with other things to create a kind emulsion, are they cooked in batches up to a certain size, or can you scale something like this up to say, six people and still do it in one shot?
