This is seriously such a rediculously easy soup recipe that anyone can make! If you love tortellini, then you will love this soup!
We served the soup out of bread bowls. You can purchase them for $1 a piece at Walmart. They’re more for looks than anything, but they sure were cute!
Start out by browning a pound of beef. We used an Italian sausage that we had on hand from a cow we purchase earlier in the year. But use whatever you have.
Then, once your meat has browned, add in spinach. Fresh or frozen, again either is fine!
Continue adding Italian seasoning, broth, and 2 cans stewed tomatoes. Cut up a block of cream cheese and add this into the soup, stirring to melt and combine your ingredients.
Now add in an entire bag of tortellini and cook until pasta is soft.
Take your bread loaf and cut off the top to shape your bread bowl. Then you can either use a spoon or your hands to remove the bread inside the bowl.
Brush your bread bowl with an oil and seasoning mixture. Then sprinkle with Parmesan and place in the oven to toast the outside of the bread bowl.
Remove from oven, scoop soup into bowl, serve and enjoy!
