    It’s really simple. Just bake the eggplant and then layer it with your favorite tomato sauce recipe, grated cheese, mozzarella and then sprinkle breadcrumbs between layers to replicate the breading of a fried eggplant cutlet. It takes way less time and is good as the original. Watch the video for the recipe!

  2. Of course posting such an iconic dish will invite a lot of nitpicking comments, starting from the infamous “salting vs. not salting of the aubergine prior to grilling” debate – I must admit, that I am in the salting camp.

    A bit unfair to compare, since he is a pro Chef and has written several cookbooks, but his style of sauce works a bit better for this dish. Personal preference though!

    Thank you for the recipe! I love melanzane alla parmigiana but it always tastes a bit greasy to me. I will definitely try cooking eggplants in the oven next time.

  4. Nice dish. I have bbq the eggplant. Works well, nice different flavour and reduces fat. However I need to fry it sometimes to have it with nice bread. You guys know what I mean.

    Joking. Real Parmigiana is too good but way too fat, everyone tries to develop his own un-fried version. I do it in a pan to get more char. The real one is such a diet breaker!
