Before everyone reading hits me with this, I was aware that tomatoes did not originate in the old world before I started this series
Please don’t put a hit on me for this, or do actually I’m tired of living
Extra virgin olive oil
Ragu Alla Bolognese (national dish) (extra virgin olive oil sauteed pancetta, carrots, celery, onion, & ground beef, deglazed with red wine, tomato puree, vegetable broth, then simmered) (added al dente spaghetti)
Arancini (deep fried balls of arborio rice sauteed in butter with onion & garlic, cooked in chicken stock & white wine on low heat while stirring constantly, with cream, grated parmesan, & lemon juice added before cooling, stuffed with mozzarella, frozen 10 minutes, coated in white flour, then beaten egg with black pepper & salt, then blended panko breadcrumbs)
Pesce Spada Alla Ghiotta (swordfish with black pepper & salt seared in olive oil and simmered in butter & chicken stock, cherry tomatoes, black olives, green olives, & capers, blistered in olive oil with garlic & red chili flakes)
Meatballs (ground beef, ground pork, breadcrumbs, milk, egg yolk, grated pecorino romano, parsley, garlic, black pepper, salt) (sauteed in extra virgin olive oil)
Chicken Parmigiana (hammered thin chicken breast coated in white flour, then beaten egg with black pepper & salt, then blended panko breadcrumbs, fried on each side, topped with mozzarella and parmesan, then marinara sauce (I used some of the Bolognese without meat) then baked)
