these Italian balls filled with meat are actually arancini, thoughnim never sure if that word is plural or singular. i annointed this arancini with a basil oil I made with kenny- a magnetic hotplate stirrer that I’ve been using to make all sorts of sauces and oils and reductions. I put basil in extra virgin olive oil at 50C for a couple of hours. With the oil, I used a days rent worth of saffron to make a florally stock. I minced garlic and weirdly, radishes, sauteed and then with rice and parmesan ends and stretched it out into a decadent risotto.
