    CAULIFLOWER CREMA

    1) Pour water, wine, and salt into a stock pot and bring to a boil

    2) Chop cauliflower head roughly and add to boiling liquid

    3) Cook for 20-30 minutes until softened

    4) Transfer to a blender and puree until smooth

    5) Add nutritional yeast and olive oil and blend to combine

    RED SAUCE/RAW TOMATO SAUCE

    1) Cut a shallow “X” into the bottom of your tomatoes

    2) Drop into boiling water for 15-30 seconds

    3) Remove tomatoes from boiling water and drop into an ice bath to stop the cooking process

    4) Peel away skins

    5) Rough chop tomatoes

    6) Pass tomatoes through a food mill into a bowl

    7) Add a pinch of salt

    -Zucchini, thinly sliced

    -Squash Blossoms (aka Zucchini Blossoms), chopped

    -Raw Tomato Sauce

    -Chili Flakes

    -Mexican Oregano

    -Olive Oil

    -Salad

    —Arugula

    —Red Onion, sliced

    —Dressing (fennel pollen, smoked salt, olive oil, lemon juice – all whisked together)

    MUSHROOM & FENNEL PIE

    -Maitake Mushrooms, torn and roasted (with salt, Mexican oregano, and olive oil)

    -Fennel Bulb, thinly sliced

    -Chili Flakes

    SPICY EGGPLANT PIE

    -Eggplant, peeled and sliced into thin rounds
