INGREDIENTS
400ml water
70g caster sugar
the zest of 1 lemon
20ml limoncello
250g ladyfingers (Savoiardi)
500g mascarpone
200ml heavy cream
50g icing sugar
10ml limoncello
the juice and zest of 1 lemon
In a bowl, mix mascarpone cheese and icing sugar with a hand mixer for a couple of minutes. Incorporate your heavy cream (cold from the fridge) little by little, add the juice and zest of one lemon, 10ml limoncello (or lemon juice) and mix until smooth.
In a small saucepan, add caster sugar, water and the zest of one lemon, mix and bring to a boil. Turn the heat off and let the liquid cool. Then pour it into a bowl, adding 20ml limoncello (or lemon juice).
Dip the ladyfingers on each side. Layer your soaked cookies in a dish, spread some of the cream on top and repeat. Let your lemon tiramisù rest in the fridge for a couple of hours (or even better overnight) and decorate with some lemon slices on top. Buon appetito!
