@giovanni castaldi today has a great recipe for us: grilled zucchini roll! Get creative and stuff you roll with your favorite ingredients!
INGREDIENTS
2 large zucchini (300 g each)
150 g of spreadable cheese
100 g of sliced cooked ham
40 g of dried tomatoes in oil
30 g of arugula
1 tbsp of milk
1/2 lemon zest
extra virgin olive oil
METHOD
Clean the zucchini and slice them 5-6 mm thick, grill a couple of minutes per side on a very hot and greased grill. Arrange the zucchini on a sheet of parchment paper, one on top of the other, forming two rows.
Spread the cheese and milk on top, then the slices of cooked ham, the arugula, the dried tomatoes and a grated lemon zest. Roll it up tightly with the help of parchment paper and let it harden in the fridge for an hour. Slice and enjoy!
