How To Make Italian Chicken Skillet | One Skillet Chicken Dinner Recipe
INGREDIENTS
1 1/2 to 2 lb. boneless chicken thighs – cubed
1 small diced onion
1 cup diced bell peppers
1 cup diced zucchini
1 1/2 cups quartered mushrooms
3 cubed plum tomatoes
5 cloves minced garlic
1 Tbsp. tomato paste
1/4 cup white wine
1/2 cup chicken broth
1/2 cup fresh basil
1/4 cup fresh oregano
1/4 tsp. salt plus to taste
1/4 tsp. black pepper plus to taste

In a skillet on med high heat add 3 Tbsp. vegetable oil and chicken cubes.
Brown 2 sides of chicken and remove from pan.
In same pan on med heat add onions and mushrooms. Cook and stir about 5 minutes.
Add plum tomatoes. Cook and stir 3-4 minutes or until tomatoes start to break down.
Add minced garlic and tomato paste. Cook and stir 1-2 minutes.
Add white wine, salt and black pepper. Cook and stir 2 minutes.
Add bell peppers and zucchini. Stir. Cover and simmer 5 minutes occasionally stirring.
Add chicken, juices and water. Stir. Cover and simmer 5 more minutes.
Add fresh herbs. Stir to incorporate.
Serve and enjoy.
