500 gr 00 Italian flour
500 gr farina di semola [durum wheat flour]
9 eggs
5 tbs water
Mix all together until smooth and let rest ½ hour covered at room temperature. Flatten fairly thick with rolling pin or pasta machine and cut with “chitarra for spaghetti tool” easy to find on-line.
