The Recipe: Chili Olive Oil, Buffalo Mozzarella, Sweet Pointed Red Peppers.
The Dough: – 500g Molino Grassi 00 flour, 320g water; 3g of yeast; 11g of salt; No sugar. No autolyse. 20g Oil. Raised the dough at room temperature until doubled in size. 3 day cold-proof.
