Traditional Italian Carbonara Pasta is a typical Italian recipe known all over the world, made from a very small number of ingredients: pasta, eggs, “Guanciale” (you can use bacon), Pecorino cheese, and ground black pepper.

So, no heavy cream, butter, onion, garlic, Parmesan cheese, or parsley.

It is very easy and quick to cook, but you will need some little tricks to avoid the “scrambled egg effect” and get a creamy sauce!

Ingredients (2 servings):
160 g spaghetti or linguine (or other pasta of your choice)
75 g “Guanciale” (if you can’t find it, you can use bacon), sliced 1/2 cm thick, without skin
3 fresh egg yolks
25 g grated Pecorino cheese + more for garnish
1 teaspoon ground black pepper + more for garnish
Salt to taste
