DOUGH 1:
2 tbsp of flour 20 g
2 tbsp of water 27 g
4½ tbsp of milk 60 g
Yeast mixture
1 tbsp of active dry yeast 10 g
1/4 cup of warm water 40 g
DOUGH 2:
Dough 1
Yeast mixture
2⅓ cup of flour 380 g
¼ cup of sugar 60 g
1 tsp of salt 3 g
½ cup of milk 130 g
1 large egg
3 tbsp of softened unsalted butter
METHOD:
Add the active dry yeast to warm water, mix and let rest for 10 mins. Add the yeast mixture and knead with water, flour and the other ingredients except the butter and mix until a smooth dough forms.
Add the softened butter, 1 tablespoon at a time and stir until the butter is completely incorporated and the dough is nice and smooth. Let the dough rise in a bowl, covered with plastic wrap, for 1.5 hours or until doubled.
Divide the dough into 75g-pieces and place them in a 9″ pan, leaving some space between them. Leave to rest for another 45 mins. Brush with egg and bake at 355°F (180°C) for 20 minutes. Brush with herb butter.
