This low-carb beef and eggplant flan is an Italian recipe made with beef, eggplant, Pecorino cheese and eggs. A complete meal with very few carbohydrates.
And it’s gluten-free: you only need just a little rice flour to better fry the eggplant.

– 50 g rice flour
– Oil for frying, as required
– 400 g ground beef
– 40 ml extra virgin olive oil
– 10 g butter
– Salt and pepper
– 100 g grated Pecorino cheese
– 2 eggs
