Baked Salmon with Lemon Basil Pesto and Puffed Pastry
1 box puffed pastry (freezer section, comes with 2 sheets)
Homemade Lemon Basil Pesto (or from the store)
3 – 4 oz. salmon fillet, frozen
Preheat oven to 400 F
Thaw one puffed pastry sheet for 40 minutes on the counter, covered.
Line a cookie sheet with parchment paper.
Cut the puffed pastry into 3 pieces. Spread 2-3 tablespoons of pesto onto the pastry. Place the salmon in the middle and fold to the top.
Bake for 20-25 minutes (depends on your oven).
If you like your salmon more well done, thaw before cooking. If you cook this dish for a full 20-25 minutes, the salmon should not be raw in the middle.
