MIX SAUCE PASTA

Ingredient

Cheese sauce
1 tbsp butter
1 tbsp refined flour
ΒΎ cup milk
Β½ cup process cheese, grated
Crushed black peppercorns to taste
Salt to taste
Tomato sauce
1 tbsp olive oil
5-6 garlic cloves, finely chopped
Β½ tsp dried red chilli flakes
4 medium tomatoes blanch and chopped
Salt to taste
2 tbsps ketchup
Crushed black peppercorns to taste
Pasta
1Β½ cups boiled penne pasta
1 tbsp olive oil
3-4 garlic cloves, finely chopped
1 large onion, sliced
5-6 broccoli florets, blanched
3-4 button mushrooms, quartered
Β½ small red capsicum, diced
Β½ small green zucchini, cut into 1 inch cubes
Β½ small yellow squash, cut into 1 inch cubes
Salt to taste
Crushed black peppercorns to taste
Parmesan cheese block as required
1 tsp dried red chilli flakes
Parmesan shavings for garnish

Method

1. Heat butter in a non-stick pan add refined flour, and whisk well. Add milk and mix well, whisk to avoid lumps. Add cheese, salt, crushed black pepper and mix well. Take it off the heat and set aside.
2. Heat oil in non-stick pan, add garlic, chilli flakes, tomatoes, and mix well. Add salt, mix well. Add ketchup, mix well and cook till the mixture is pulpy. Add crushed black peppercorns and mix well. Take it off the heat.
3. Heat oil in another non-stick pan. Add garlic, onion and sautΓ© till golden brown.
4. Add broccoli, mushroom, red capsicum, zucchini, yellow squash, and mix well. Add salt, crushed black peppercorns, mix well and cook for 1-2 minutes.
5. Add prepare tomato sauce and white sauce in the vegetable mixture and mix well
6. Add pasta and mix well, sautΓ© for 2-3 minutes. Grate parmesan cheese on top and sprinkle red chilli flakes.
7. Garnish with parmesan shavings and sprinkle black pepper on top. Serve hot.
