Classic Italian Soup. Not as thick as it’s supposed to be, but that’s due to a personal preference. You can alter the recipe as you like if you know what you’re doing 🙂
Recipe (In order):
• Olive Oil – 2 TBSP
• Garlic – 4 cloves – chopped
• Carrots – 1 Medium – Diced
• Potatoes – 2 Medium – Diced
• Peas – 100 G
• Tomato Puree – 1BTSP
• Hot Water – 2 Cups
[ Simmer 15 mins ]
• Zucchini- 1 Medium – Diced
[ Simmer 2 mins ]
• Spring Onions – 200 G
• Spinach – 250 G
• Beans – 150 G
[ Simmer 5 mins ]
• Tomatoes – 6 Medium – Diced
• Coriander – 50 G
• Pasta of choice – 100 G – Pre-Boiled
• Thyme – 1 TBSP
• Salt – To taste
• Pepper – To taste
• Vegetable Broth – 4 Cups
= Cook over a period of 20 minutes. Constantly stir on medium heat.
