Yes it’s a simple spaghetti recipe that will change your mind about eating vegan food. This pasta offer layers of flavors . It’s spicy with enough acidity, creamy, and also use perfectly cooked noodles to make wheat flavor stands out.
This Vegetable pasta is also easy to make. And only took 10 minutes to cook including al dente pasta and flavorful homemade pasta sauce. Even if you include the prep time, you can still call this a perfect 15 minutes recipe.

Full Recipe
Preparation:
Dice onions and garlic (just a bit to sauté)
Dice 3 fresh tomatoes
Cut black Olive in half
Cut eggplants in chunks
Cut chillies in half and take out the seeds
Cooking:
Sauté diced onions, garlic and chilies with olive oil
(fry in cold oil then heat up)
then add thyme
add fresh tomato slices , add vegan wine if you have it
Add Pitted black olives .. go for unpinted ones for full flavor..
Put lemon or orange zests .. will make all the difference
add eggplants
Simmer for 5 minutes
*while simmering the sauce
Put pasta in the boiling water
Add 3 tbs of salt
Stir occasionally
Boil until they are 80 % cooked ( 2-3 mins less than what is say on the pasta pack) you can finish cooking then in the sauce.
Season the sauce
Add 1 tbs balsamic vinegar (optional)
After cooking pasta for 9-10 mins – transfer them into the sauce pan. Let them settle nicely into the broth / sauce you have been making toss a bit (finish cooking the pasta (let pasta absorb all the flavors in the sauce at the same time)
// then add coconut milk (half cup or less according to your taste)
tear up parsley and basil like Italian grandmas would and put that in
Drizzle olive oil over everything
Toss/ mix few times
Then all done.
Plate and serve (if you have vegan Parmesan cheese . Go ahead and sprinkle some)
