SPAGHETTI AGLIO E OLIO

INGREDIENTS:
1. Spaghetti 250 gas
2. Garlic sliced 1/2 cup
3. Chopped Celery or coriander leaves 1 cup
4. Red chilli flakes 1/2 tbsp
5. Olive oil
salt as required

PROCEDURE:

1. Heat a big pot of boiling water and generous amount of salt in it.
2. Add spaghetti and cook till al dante.( just under cooked or 90% cooked)
3. Reserve 1 cup of pasta stock and drain the rest of the water . Keep it aside.
4. In a wok or Kadhai add Olive oil and sliced garlic.
5. Turn the flame on and add red chilli flakes.
6. Cook for a minute taking care not to brown the garlic.
7. Add cooked spaghetti and mix well.
8. Now put the chopped coriander leaves and mix.
9. Add 1/2 cup of reserved pasta water and cook on high flame.
10. Cook till you get the desired consistency adding more pasta water if necessary.
11. Turn off the flame and add grated cheese (optional).
12. Serve hot
