It’s almost Halloween so why not make a good old super fluffy pumpkin pie.
Ingredients:
250 gr of pumpkin pulp (weighed cooked)
240 grams of flour 00
120 grams of sugar
1 teaspoon vanilla paste
1 egg
65 gr of soft butter
1 sachet of baking powder
q.s partially skimmed milk
a pinch of salt
powdered sugar
Recipe:
Cook the pumpkin in the oven at 180 degrees for 40/45 minutes or in a pot with a little water, as soon as it is tender, remove it from the heat.
Weigh the 250 grams of pumpkin pulp and blend.
Work the egg well with the sugar, until it becomes frothy and light yellow in color, using electric whips. Add the soft butter, mix again and then add pumpkin, vanilla paste, and salt, stirring with a spatula.
Sift flour and yeast into the mixture, at this point, depending on the cooking method of the pumpkin, you can add a little semi-skimmed milk to adjust the consistency and make everything softer.
Pour the mixture into a buttered pan with a diameter of 24 cm and bake at 170 ° for 40 minutes in a convection oven.
As soon as it is cold, sprinkle with powdered sugar. It keeps soft for about a week.
