ITALIAN WEDDING SOUP RECIPE HOW TO MAKE ITALIAN WEDDING SOUP
2TBS OLIVE OIL
3/4 CUP EACH OF CARROTS, CELERY AND ONION , DICED VERY SMALL
1TBS MINCED GARLIC
8 CUPS CHICKEN STOCK ( half broth half stock is fine )
2 CUPS WATER
2 CUPS MINI MEATBALLS (I used prepared meatballs). If you do not have those, make your own using 1/2 pound each ground beef and pork with 3/4 cup bread crumbs, 1 egg beaten and 2TBS parsley, 1tsp each salt and pepper. Make super small like a gumball. Bake in oven 350 degrees for about 5-7 minutes. Drain off fat.
3/4 cup acini di Pepi , I happen to use orzo , it’s what I had at home
1/2 cup chopped frozen spinach drain dry,
