Weight Loss Recipes No.1 : Italian Tuna Melt Recipe
Ingredients :
2 cans (5 oz each) tuna, drained
1 small red onion, diced
1⁄4 cup chopped green olives
2 Tbsp olive oil mayonnaise
2 Tbsp bottled pesto
1 Tbsp capers, rinsed and chopped
Juice of 1 lemon
8 slices whole-wheat bread
2 oz fresh mozzarella, sliced (you can use low-fat shredded mozzarella, too)
1 large tomato, sliced
About 1 tsp olive oil

Method :
In a mixing bowl, combine the tuna, onion, olives, mayo, pesto, capers, and lemon juice, and stir to combine.
Preheat a cast-iron or non-stick pan over medium heat.
Coat with a thin layer of olive oil, and cook the sandwiches for 2 to 3 minutes per side, until the bread is toasted and the cheese is melted.

Weight Loss Recipes No.2 : Caprese Tomato Tower Salad Recipe
Ingredients :
4 medium tomatoes (Preferably different color heirloom tomatoes. Whether rare heirlooms or just a better beefsteak, tomatoes are best from farmers markets. Seek out a local market and show up at the end of the day, when vendors are offering up great deals.)
6 oz fresh mozzarella
16 large fresh basil leaves
1 Tbsp olive oil
1⁄2 tsp balsamic vinegar
Salt and black pepper to taste

Method :
Slice the tomatoes into thick slices (each tomato should yield 4 or 5 slices). Slice the cheese into slightly thinner disks. There should be an equal number of tomato and cheese slices.
Place a tomato in the center of small salad plate.
Top with a mozzarella slice and a single basil leaf. Repeat until you’ve used up a quarter of the tomatoes, cheese, and basil (if you really want to nail this, salt and pepper each individual layer). If using different color tomatoes, alternate the slices throughout.
Repeat with the rest of the tomatoes, cheese, and basil, making 4 towers in all.
Drizzle each tower with a bit of olive oil and balsamic and season again with salt and pepper.

Weight Loss Recipes No.3 : Chicken Panini With Pesto and Peppers Recipe
Ingredients :
8 slices whole-grain sourdough bread
4 Tbsp homemade or prepared pesto
4 oz fresh mozzarella, thinly sliced (Fresh mozzarella is both tastier and lower in calories than regular mozz, but it’s also more expensive. Any shredded part-skim mozzarella will work as a solid substitution, but if you can, support a local farmers market and pick up some fresh.)
3⁄4 lb cooked chicken
1⁄2 cup roasted red peppers
Olive oil

Method :
Heat a large cast-iron skillet or stovetop grill pan over medium heat.
Spread 4 pieces of the bread with 1 tablespoon of the pesto each.
Layer each piece with equal amounts of the mozzarella slices, chicken, and red peppers.
Add a light film of olive oil to the pan; when hot, cook the sandwiches (2 at a time, if necessary) until the bread is crispy and the cheese is melted, 3 to 4 minutes each side. (For the best results, use a heavy pan to weigh down the sandwiches.)
