Recipe: Piccata, chicken piccata,
veal (veal piccata) / (piccata di vitello al limone),
swordfish (pesce spada con capperi e limone).
Ingredients and procedure….
A chicken breast is butterflied or sliced,
Flattened with a tenderizer
Seasoned and dredged in flour,
Browned in butter or olive oil ,
Sauce,
Lemon juice and white wine or chicken stock are added,
Shallots or garlic can be added with capers,
Chopped parsley and slices of lemon.
Butter is stirred in to finish the sauce.
Served with a vegetable or a starch, such as pasta, polenta, or rice.
