When #Camping , we always look for easy, quick, and simple way to cook our meals; and we always look for great camping meal ideas. This authentic #pasta recipe ( cooked by a real Italian Chef ) can be easily prepared #outdoor as well as at home. This is a very fast and beginner friendly car camping dinner that we make all of the time. We used our coleman dual fuel camping stove but this meal can be prepared also with a single burner stove, just cook the sauce first then the pasta. If you don’t like Eggplants you can swap them with Peppers ; it will be equally tasty.
Aldo is a professionally trained Italian chef and before becoming a full time vagabond, he has been in the cooking business for more than 20 years.

Penne Pasta “alla Siciliana” Sicilian Style
INGREDIENTS for 4 people ( or 2 if very hungry 😂 )
350gr. Pasta (short cut preferably)
500gr. Eggplants (Aubergines)
350gr. Fresh Tomatoes
350gr. Mozzarella Cheese
40gr. Parmesan Cheese
2-3 Garlic cloves ( for the breath 😜 )
Extravirgin Olive oil to taste
Salt to taste
Pepper to taste
Basil to taste
