It’s one of the most simple Italian recipes but the end result is something amazing.
Ossobuco or osso buco is Italian for “bone with a hole” (osso “bone”, buco “hole”), a reference to the marrow hole at the centre of the cross-cut veal shank. In the Milanese variant of the Lombard language, this dish’s name is òss bus.

The Recipe
1 Kg Veal or Beef Shank (I used beef) traditionally its veal
220g Onions about 1 Large or two Med Onions
210g Carrots about 2 Medium Carrots
60g Celery Stick /2 Stems
30 g Garlic /1 head approx
10 Black Peppercorns
3 Bay Leaves
5 Allspice Berries
50g Cognac (OPTIONAL)
110g White wine
22 g Tomato Paste /APPROX 1Tsp
400g Crushed Canned Tomatoes / 1 Small Can
700g -1 lt of homemade beef stock /
note if you use concentrated stock it will be too salty
Cooking time between 4 – 6 hours
oven temp – if you decide to cook it in the oven 160 c
