ITALIAN LEMON ICE RECIPE

This recipe will make a quart-1.25 quarts.

Ingredients:

4 cups water
2 2/3 cups sugar
2 2/3 cups lemon juice
8 sprigs fresh thyme
8 tsp lemon zest

Directions:

Add sugar to water and heat until sugar is dissolved into the water
Add lemon juice, thyme, and lemon zest to water
Let cool to room temperature (set pan in icy water if quickness is important)
Take out thyme sprigs. Sbrigati.

Set in ice cream maker until ripe (frozen)
