Kesar Pista Kulfi Panacotta
•Ingredients:
Full Cream Milk 1 litre
Milk Powder 1 tspn
Condensed Milk 3 tbspn
Sugar 2 tbspn
Pistachios 15-20 nos
Gelatine 15 gms
Saffron
Cardamom Powder
Chikki / Nougat for garnish
•Method :
In a large bowl : mix together milk , condensed milk , sugar and milk powder. Allow all the ingredients to dissolve well.
In a thick bottom pan – heat the milk mixture. Until it is half its original quantity.
Blanche the pistachios – de skin them and chop them finely.
Soak 15 gms gelatine in 2 tson hot milk. Allow it to rest for 2-3 mins.
Now add the soaked gelatine to the milk . Stir well.
Add the chopped pistachios and saffron and cardamom powder.
Cook for further 2-3 mins.
Pour into glasses and refrigerate for 2 hours.
Once chilled garnish with crushed chikki and serve chilled.
