Serves 2-4
1 lb polenta
1 c. Enchilada sauce
2 c. Marinara sauce
1-4oz can green chiles
8 – 10 oz shredded chicken (used crockpot)
Olive oil for pan
*optional: 1-2 drops of basil DoTerra essential oils (add drops after at end to sauce)
*vegetarian: omit chicken and add favorite veggies
*add more sauce if you like it saucy.
Combine sauces, veggies and green green chiles in pan. Low-medium heat and allow to boil then simmer.
Slice polenta into discs and place in frying pan with olive oil. Crisp to your liking. Enjoy.
