This #shorts chicken skillet recipe is an Italian style Instant Pot dinner that is finished in the oven in a cast iron skillet! Best of Both Worlds in this recipe – using the Instant Pot to brown and cook the chicken and sauce, and then a skillet to finish the recipe. You will love the tomato sauce flavored with onion, garlic, basil and balsamic – I even used the extra sauce for soup!!!
Today I am using chicken breast pieces but you could also use chicken thighs! Whatever you have on hand!! I love to serve this with pasta and garlic bread – you will just have to believe me that I had some salad before serving this!
4 Chicken Breasts, Bone-In, Cut into Pieces
1 28 Ounce Can Crushed Tomatoes
1 1/2 C Chicken Stock
1 Onion, Diced
8 Garlic Cloves
1 C Basil Leaves
1 C Parmesan Cheese
1 Cup Heavy Cream
2 Bay Leaves
1-2 t Crushed Red Pepper Flakes
1/4 C Balsamic Vinegar
1. Wash and clean chicken breasts, dry and cut into pieces.
2. Salt and pepper the chicken.
3. Put instant pot into sauté mode. Add olive oil.
4. After oil heats up, sauté chicken to brown, 2-3 minutes each side. You will have to do batches depending on the size of your chicken pieces and the size of your instant pot. I had to do two batches.
5. Remove chicken and add the chopped onions. Sautee onions for a few minutes.
6. Now add balsamic vinegar and scrape the pot to deglaze all the chicken bits.
7. Add chopped garlic and sauté a few more minutes.
8. Add the chicken pieces back into pot. Arrange them carefully try not to have the pieces on top of each other if possible.
9. Now turn off sauté mode and add a can of crushed tomatoes.
10. Add Chicken Stock.
11. Add bay leaves and crushed peppers.
12. Close pot and pressure cook for 30 minutes.
13. Release pressure and remove bay leaves.
14. Remove chicken pieces and skim for bones.
15. Put Instant Pot on Saute and Add 1 Cup of Heavy Cream/Whipping Cream
16. Simmer Sauce
17. Add chicken pieces to skillet.
18. Ladle sauce over chicken.
19. Cover surface of skillet with Parmesan Cheese.
20. Sprinkle chiffonade basil on top.
21. Backe in 350 F oven for 30 minutes.
22. Serve with Garlic Bread, Pasta and Veggies – ENJOY!!!
