Minestrone

Minestrone is the most popular Italian soup. The secret of its success is in its amazing taste and ease of preparation. It is based on broth, vegetables and legumes. Italians prepare it with seasonal vegetables, those that are in the kitchen. In winter, frozen peas and canned beans are used. The main thing is that all the products in this soup are useful and this is another significant plus.
Ingredients:

Green peas-100 g (frozen)
Broccoli-100 g
Zucchini – 100 g
Celery – 2 stalks
Onion – 100 g
Leek – 100 g
Garlic – 4 cloves
Potatoes – 100 g
Carrot – 100 g
Canned white beans-150 g
Pumpkin – 100 g
White cabbage – 100 g
Cherry tomatoes-250 g
Fresh basil – 10 g
Fresh parsley – 10 g
Vegetable broth-1.5 l
Olive oil-2 tbsp
Dried oregano-1 tsp
Pasta-40 g
Salt-1 tsp
. Black pepper – ½ tsp.

You will need:

Cutting board
Pot from 4 liters

Preparation:

Cut into small cubes vegetables, except tomatoes, put in a saucepan, pour hot vegetable broth, add herbs, salt, ground black pepper, dried oregano, mix. Bring to a boil and cook for 15 minutes over low heat.
Add the olive oil to the soup, mix the pasta and cook for another 5 minutes on low heat.
Serve the minestrone hot with fresh bread.
