Recipe:
For the dough:
400 gr durum wheat flour
100 gr. normal flour
100 gr. butter
5 gr. salt
225 gr. warm water
For the filling:
500 gr. semi-ripened Provola cheese
grated 1 lemon zest
Optional: Once, try using orange zest instead of lemon zest.
Put both kind of flours, in a bowl or in planetary mixer bowl as in the video,
in the case use “k shape” tool for mixing.
Add the butter, salt and the water. Mix well.
When the dough is ready form a ball;
wrap the dough ball in a transparent film
and put in the fridge for 30 mins.
Cut the Provola cheese (without the thin peel) in pieces,
and put in a mixer using the “blade tool”
to chop finely, adding at the same time
the grated lemon zest and a pinch of salt.
Roll out the dough by hand (or with a pasta maker machine
as in the video) until the thickness is around 1.5 mm
Put the filling on the pasta sheet,
close overlapping another pasta sheet
and gently press to remove the air inside.
Cut the seadas in a round shape using the knurled wheel
as you can see in the video.
Fry Seadas in peanut oil
turn them one by one to make it golden brown on both sides.
When ready, put Seadas over an absorbent paper.
Serve immediately in single plate, then sprinkle with
abundant sugar or coat with honey as to your choice.
