3 COURSE ITALIAN MEAL FOR A WEEKEND DELIGHTS – It contains ARRABBIATA PENNE PASTA, CREAMY GARLIC MUSHROOM SAUCE and SOME STEAMED FRESH VEGETABLES with freshly squeezed ORANGE JUICE.
ARRABBIATA PENNE PASTA – it is pasta cooked in arrabbiata sauce which is a spicy sauce made from garlic, tomato, sun dried chili peppers cooked in an olive oil.
FOR PASTA:
– Penne pasta 500g
– Olive oil 2tbsp
– Garlic 3 tbsp.
– Red pepper powder 1 tsp.
– Tomato puree 2 cups (200g of tomato)
– Sugar 1 tsp.
– Salt as needed
– Pepper 1 tsp.
– Parmesan cheese ¼ cup
– Oregano ½ tsp.
– Thyme ½ tsp.
– Lime juice optional
VARIATIONS:
• You can substitute penne pasta with spaghetti noodles.
• Add some grill desired vegetables ground beef, chicken, shrimp, and meat balls based on your choice.
• Make the sauce and allow it to cool completely. Store it in a freezer safe container for 2 to 3 months. Reheat the sauce on a low heat, make noodles fresh for serving.
CREAMY GARLIC MUSHROOM SAUCE – In this smart sauce made with simple ingredients cooks in one pan in less than 30 minutes.
FOR SAUCE:
– Mushroom 250 gms
– Butter 2 tbsp.
– Garlic 3 cloves
– Heavy cream 1/3 cup
– Thyme ½ tsp.
– Oregano ½ tsp.
– Salt as needed
– Pepper 1 tsp.
– Parsley leaves
– Parmesan cheese 2 tbsp.
– All purpose flour / maida 1 tbsp.
– Milk 250 ml
SUGGESTIONS:
• Mushrooms can be alter with boneless chicken breasts.
• If you are vegan substitute with coconut cream and coconut milk.
STEAMED VEGETABLES – this is one of the easiest way. We can just let the veggies steam and toss them with a little butter and your favorite seasoning before serving. Done!!
FOR VEGGIES
– Butter 1 tbsp
– Pepper 1tsp
– Salt as needed
– Vegetables of your choice 2 cups
(Green peas, French beans, broccoli, Cauliflower, Carrots)
SUGGESTIONS:
• Slice the vegetables the same thickness so they can cook evenly.
• Feel free to add some herbs such as oregano, mint, basil, parsley. For extra kick add some freshly squeezed lime juice too.
• Make sure don’t get veggies mushy. It will be crunchy while biting.
