This easy chicken recipe with vegetables will impress your loved ones as I will teach you how to cook like a chef. In this recipe, I will be using fresh chicken breasts along with a selection of tasty vegetables and Italian herbs in a foil wrap that will look absolutely amazing on your plate. This dinner recipe is perfect for your Valentines dinner or any special occasion that’s simple and easy to make. Even if you’re not a confident cook, you will definitley look like a chef once you’ve tried my recipe.

Ingredients – Serving size 2 persons

2 fresh chicken breasts (approx 4-6 ounces each)
2 twigs of rosemary
Zesty Italian salad dressing
Small potatoes – yellow and red
Brussel Sprouts
Spinach
Bell peppers – 1 each of yellow, red, orange
Mini vine tomatoes
Asparagus
Rosemary
Salt/Pepper
Extra virgin olive oil
2 aluminium foil sheets

Instructions

Lay 2 foil sheets flat on the kitchen counter.
Apply a splash of Zesty Italian salad dressing shaken well on the base of foil paper.
Cut 3-4 small potatoes in half. Use mixed yellow and red potatoes for optimal presentation.
Add salt and pepper on potatoes.
Add 4-5 asparagus spears per foil sheet.
Add a handful of spinach to each foil sheet.
Place fresh chicken breast in middle with ingredients on either side.
Apply ¼ cup of Zesty Italian salad dressing all over the chicken.
Add mini vine tomatoes and any remaining vegetables.
Close foil
Preheat oven to 425F for 45 mins
Remove from oven and open foil. Apply olive oil on top of your chicken and vegetables and put back in the oven at 450F for 10 mins ensuring that foil is open.
