Italian Breakfast Pizza 20 minutes
For those of us who love Italian foods, the comfort of a relaxing Italian-inspired breakfast is only 20 minutes away.
Ingredients
1/2 cup plus 2 tablespoons water
1 (6-ounce) box of Italian stuffing mix
6 large eggs
21/2 teaspoons Italian seasoning, divided
19 slices turkey pepperoni
1 (8-ounce) can tomato sauce
1 cup fat-free shredded mozzarella cheese
Instructions for entrΓ©e:
Preheat the oven to 400 degrees.
Spray a 12-inch nonstick, oven-safe saucepan with nonfat cooking spray.
Turn heat on high. Place 1/2 cup water in the pan; stir in the Italian stuffing mix. (I used Stove Top brand.)
Reduce heat to medium. With a pancake turner, press the stuffing into the pan to form a crust.
Cover and continue cooking over medium heat while preparing the egg mixture.
In a large bowl mix the large eggs with 2 tablespoons water and 1 teaspoon Italian seasoning until well blended.
Pour the egg mixture on top of the stuffing.
Place 19 slices of turkey pepperoni on top of the egg and stuffing mixture.
Cover and cook over medium heat for 5 minutes or until the eggs are dry
on top.
Remove from the heat and spread 3/4 of the can of tomato sauce over the egg and stuffing mixture, and then sprinkle with 1 teaspoon Italian seasoning.
Sprinkle the top of the tomato sauce with 1 cup fat-free shredded mozzarella cheese and the remaining 1/2 teaspoon Italian seasoning.
Generously spray the cheese with nonfat cooking spray.
Place the pan in the preheated oven on the top rack for 1 minute or until cheese is melted.
