This is one of the desserts that reminds me the most of my childhood. It was the desserts my mother used to prepare very often and I have always loved it. Starting from the idea of a coffee brownie with a smooth Italian meringue, I have created this absolutely delicious Chocolate Meringue Brownie.
Ingredients:
Coffee Brownie
flour 150g.
cocoa powder 50g.
baking powder 1 teaspoon
a pinch of salt
2 eggs
butter 60g.
dark chocolate 100g.
sugar 150g.
espresso coffee 80ml.
Italian Meringue
3 egg whites
sugar 200g.
water 30ml.
Optional: lemon extract
Fresh raspberries
Instructions:
1. Melt the chocolate with butter over a bain-marie, then let to cool down. You can also melt them in the microwave.
2. Add the eggs and mix.
3. In a different bowl, add the flour, baking powder, a pinch of salt, sugar, and cocoa powder, and combine it with the chocolate mixture. Add then the espresso and combine.
5. Bake the chocolate brownies in the preheated oven at 170°C for 25-28 minutes.
6. Let to cool down completely.
7. For the Italian meringue, heat up the sugar with water until you reach 121°C.
8. In a stand mixer or bowl, mix slightly for 1 minute the egg whites with a pinch of salt. Once the sugar syrup is ready, start pouring it over the egg whites and keep mixing until you get stiff peaks of your meringue and the bowl cools down. Optionally, you can add a few drops of the lemon extract while mixing.
9. Spread the Italian Meringue and decorate with fresh raspberries. You can store your Meringue Brownies in food storage containers with lids, in the fridge!
