For this italian dish you need:
-basil
-garlic
-pine nuts
-grated parmesan cheese
-spaghetti pasta
-extra virgin olive oil
-salt and pepper to taste
-1 teaspoon of grated nutmeg
Preparation:
After I rinsed and dried the basil, I lay it down on some paper towels for about 1 hour to make sure that all the excess water is absorbed.
Meanwhile, I grate the parmesan cheese using a food processor.
Then I fill a big pot with wather and I let it boil.
Now it’s time to mince the basil in the food processor adding some olive oil until I obtain a thick creamy consistency.
During the process I add (one by one): salt and pepper to taste, the parmesan cheese, the pine nuts, the garlic and at the end, the nutmeg.
After that, the pesto sauce is ready.
Next, I sprinkle a big amount of salt in the boiling water and I put in the pastas. After 11 minutes they should be ready.
I drain the pastas and then I mix them with the pesto sauce.
Add a little bit of grated parmesan cheese on top for a rich iatalian taste.
