250 g (2 cups) cake flour
50 g (1.8 oz) sugar
20 g (0.7 oz) raisins
2.5 g (0.1 oz) anise seeds or powder
5 g (0.2 oz) baking powder
1 pinch salt
80 g (2.8 oz) sweet red wine or mosto
65 g (2.3 oz) vegetable oil sunflower seed

100 g mandorle intere e con la pelle
75 g latte vegetale soia, mandorla, avena
60 g olio di semi di girasole
100 g zucchero
50 g zucchero a velo
2.5 g sale
scorza di mezzo limone
½ tsp aroma di vaniglia
7.5 g lievito per dolci
300 g farina 0 o 00
✪ Amaretti Morbidi (Soft Almond Cookies)
115 g (1 cups) almond flour
70 g (2.5 oz) sugar
50 g (1.8 oz) powdered sugar
½ tsp (½ tsp) baking powder
25 g (0.9 oz) acquafaba
7 g (0.2 oz) amaretto liqueur or almond aroma
½ tsp (½ tsp) vanilla flavour
3 tbsp (3 tbsp) powdered sugar for coating the amaretti

145 g (1 cups) almond flour or very finely ground almonds
70 g (2.5 oz) sugar
50 g (1.8 oz) powdered sugar
7.5 g (0.3 oz) candied orange or orange zest
½ tsp baking powder
½ tsp salt
25 g (0.9 oz) aquafaba
5 g (0.2 oz) almond extract optional
½ tsp vanilla aroma
2 tbsp corn starch
2 tbsp powdered sugar for the topping
