Calamarata is an Italian cuisine,one that particularly originated from Naples,whose unique characteristic is that it is prepared with calamarata pasta , a special shape in the shape of squid rings from which it takes its name! Once cooked al dente, it is as firm as it is and seasoned with a creamy tasty squid and cherry tomato sauce; where the squid rings blend with those of pasta , embracing in a circle of flavors with the scent of the exquisite Italian recipe!
What I present today is the Original recipe of Neapolitan Calamarata; one of my favorite! Believe me, after trying so many, this remains the best recipe,the typical pasta with calamari which in Naples is a real cult, try it and
you will bring to the table a tasty and creamy Calamarata as in the restaurant !
It is a simple preparation and also pretty fast ; just a few fresh and genuine ingredients , a few steps; the secret is to use an excellent quality bronze-drawn pasta that does not overcook ! In this way the pasta rings will blend with all the flavor of the squid resulting in very creamy and super tasty! I find it perfect as a first course for all seasons and for all occasions ; from the Christmas holidays to the summer ones, from a Sunday with the family to a lunch with friends.
