You are about to make your friends very happy!! This recipe is made up of simple, easy to find ingredients. You likely have most of them at home anyway. So grab a couple of extra packages of Mascarpone cheese next time you are at the store and make some espresso, because you will be making one of these this holiday season.
Simple Recipe
Amount Ingredients
9 Ea Egg Yolks
1 Cup Sugar-Granulated White
2 Cups Mascarpone Cheese-Room Temp
2 oz Dark Rum
2 1/2 Cups Heavy Cream
2 teaspoons Vanilla
45 Ea Lady Fingers
1 1/2 Cups Espresso
1 1/2 oz Unsweetened Cocoa-For Dusting
Procedure
Place Egg Yolks in double boiler and beat for about 1 minute, then add 1/2 of the sugar. Beat until incorperated.
Turn heat on low whisking the entire time. Add remaining sugar and continue to whisk until thickened and ribbon forms.
Separately beat cheese with mixer until smooth.
Add Rum and mix until incorporated.
Now add the Egg Mixture into the cheese mixture and beat until smooth. Be sure to rake the sides.
Separately, in a larger bowl, add Heavy Cream and Vanilla and mix until soft peaks.
Fold 1/3 of the Cream mixture into the egg/cheese mixture. Then follow with the remaining 2/3 of the mixture until smooth.
Roll the Lady Fingers in the Espresso briefly to wet all sides, but do not soak. Avoid them being mushy!
Place them in an organized and close pattern in the bottom of a 9×13 pan. Cover with 1/2 of the whipped filling.
Make another layer of the lady fingers, placing them in a different direction then the previous layer of possible.
Cover the second layer of lady fingers with the remaining whipped filling. This time make sure to get the top smooth.
This is important because this is the final top layer that will be seen.
Now wrap with plastic and refrigerate for at least 4 hours, but best if overnight. Be sure that the plastic does not touch the top of the dessert.
Remove plastic and place Cocoa into fine strainer. Tap strainer to dust while moving to get even coverage.
