This is my favorite recipe for cooking a whole fish – in salt crust in the oven. It works any time, no matter what kind of fish you cook. The bigger and the fresher the more delicious.

Ingredients for 2 servings:
2 sea breams (400 g each)
2 kg sea salt
1 lemon
1 orange
2 sprigs of thyme
For the sauce:
100 ml olive oil
1 bunch parsley
1 tsp capers
1 clove of garlic
1 tbsp red wine vinegar
Salt and black pepper
