Risotto is one of my favourite things to make when it’s cold out. I get all Nigella with it, and stand over my pot of rice and stock, glass of wine in hand, and some jazzy music on as I stir stir and stir. It’s actually very good for de stressing at the end of a hard day. It’s just you and the risotto. the house could be burning down, but you know you have to keep on stirring that pot of rice and stock, or else it shalt be no goodeth!

Now i’ve done a few risotto recipes on the channel, and this one has a more autumn/ winter vibe. I use some frankly excellent Italian sausages, which are little flavour bombs full of fennel, garlic and red wine. If you have never tried italian sausage before, then go get some. I promise you will not be disappointed. So yeah, Italian sausage risotto let’s go!
To make my Italian sausage risotto recipe you will need:
Serves 2-3
►200g of risotto rice (arborio or carnaroli)
►About 700-800ml of chicken stock
►1/2 a large onion
►1 garlic clove
►3-4 Italian sausages skins removed
►A good glass of white wine (about 150 ml)
►1/2 tsp of thyme or rosemary
►Olive oil
►Grated parmesan cheese
►A touch of lemon zest to finish (optional)
►Salt & pepper
