🍜 🍜 Italian Sausage Soup Recipe 🍜 🍜
Ingredients:
1 Yellow Onion
8 Ounces hot or sweet Italian Sausage
2 Cups fat-free, low-sodium chicken broth (or veggie)
1 (14.5 ounces) can diced tomatoes with basil, garlic, and oregano
1/2 cup uncooked small shell pasta
2 cups baby spinach leaves
Parmesan/Romano Cheese for garnish
Chopped fresh basil for garnish
Directions:
1. Heat up 1-2 tbsp. of olive oil in a medium/large pot or dutch oven. Cook onion 3-4 minutes until onions become translucent. Add sausage to pan and cook until browned stirring to crumble. Drain sausage onion mixture and return to pot.
2. Add broth, diced tomatoes with juices, and pasta to pan and bring to boil. Cover, reduce heat and simmer for 10 minutes or until pasta is cooked through. (Note – add more broth if you need more liquid to the soup)
3. Remove from heat and stir in spinach until wilted. Serve in soup bowls and garnish with basil and parmesan cheese and enjoy!
