Spaghetti Aglio E Olio is one of the most traditional Italian pasta dishes. It can be translated as Spaghetti (with) garlic and oil. Ingredients:
300 gm spaghetti pasta
water
salt
2-3 tbsp olive oil
salt to taste
6-7 big garlic cloves, chopped
1 & 1/2 tbsp chilli flakes
2 pinches salt
cold water
Italian seasoning as per taste
black pepper
basil leaves
grated grana padano / parmesan cheese

Method:
1) In a vessel in which you want to cook the pasta, take some water. Add salt to it.
2) Let the spaghetti stay in the boiling water. Do not disturb. It will automatically slide while getting cooked.
3) Don’t overcook the pasta. Keep it al dente.
4) In a heavy bottom pan, take olive oil and add chopped garlic to it. Let it simmer on low flame. Add chilli flakes to it.
5) Keep checking on the pasta in between. Add salt if required.
6) As the pasta is cooked al dente, transfer it into a strainer and pour cold water over it. So that its temperature drops and it doesn’t stick to each other.
7) Add this pasta to the oil mix. Fold in the pasta lightly and carefully. Add Italian seasoning.
8) Cover it and keep it to cook just for 2 mins.
9) While serving, sprinkle black pepper and top it up with generous amount of grated grana padano or parmesan cheese.
