The Italian Carrot Cake is a delicate, tasty and very soft recipe, very different from all other carrot cakes. A typical Italian recipe, the “Camilla” Carrot cake is a classic of Italian families’ snacks and breakfasts.

Ingredients for a 22 cm diameter Carrot Cake:
200 grams of white flour
250 grams of fresh carrots ๐ฅ
200 grams of white sugar
100 grams of chopped almonds
3 whole eggs ๐ฅ
The zest and juice of an orange ๐
150 grams of sunflower Oil ๐ป
16 grams of baking powder for pastry ๐ฅฎ
1 pinch of salt ๐ง
To start, peel the fresh carrots and cut them into cubes. Put the diced carrots in the mixer with sunflower oil and the chopped almonds, mix well until you get a smooth and homogeneous cream.
At this point, put the whole eggs and white sugar in the mixer bowl and mix well until the mixture is puffy and well blended.
Once the eggs are whipped with the sugar, add the carrot and almond cream obtained previously and mix well at medium speed.
Scrape the zest of a whole orange and add it to the dough while continuing to mix.
Immediately after, add the flour, baking powder and a pinch of salt and mix again.
Finally add the juice of an orange and mix until all the ingredients are well combined.
As you can see it is a very quick recipe and the flavor of the Camilla carrot cake will surprise you.
pour the dough into a buttered 22 cm diameter cake pan with no stick paper.
Put in a preheated oven for 50 minutes at 180 degrees and that’s it!!! Enjoy your meal!!!!
