INGREDIENTS

4 green or any color bell peppers (400 gr/14 oz)
230 gr / 8 oz tuna in oil drained
200 gr / 7 oz ricotta cheese
20 gr / 0.7 oz anchovies in oil drained
20 gr / 0.7 oz capers in salt (if not found it is ok in vinegar)
15 gr / 0.5 oz coconut flour unsweetened
8 gr / ¼ cup of fresh parsley
2 eggs
50 gr / 1.8 oz Parmesan cheese
Salt to taste
Black pepper to taste

Note: If you do not like anchovies or capers, you can omit them, you will have to add more salt to the mixture. These are ingredients that are used a lot in Italy with fish and vegetables.

In Italy you can get capers preserved in salt or vinegar. If in your country you get them preserved in salt, is better this option, just leave them in a bath with water for 10 minutes to dilute the salt and then rinse them. If you only get capers in vinegar, do the same procedure, it is possible that the flavor of vinegar does not disappear completely, but it will be reduced.
