SAUTEED LEMON ESCAROLE
This is a wonderful, healthy recipe to push you through the cooler months and keep you strong, fit and satisfied!!!

INGREDIENTS:
2 HEADS OF ESCAROLE, WASHED AND LEAVES TORN AND CHOPPED
2 -4 CLOVES OF GARLIC
1.5 – 2 TBS OLIVE OIL
1/2 – 1 RED ONION CHOPPED
A SPRINKLE TO 1 TSP EACH OF THE FOLLOWING –
SALT, CRACKED RED PEPPER AND BRAGG ORGANIC SPRINKLE TO TASTE
3 TBS TO 1/2 CUP OF ORGANIC LEMON JUICE
1.5 TBS OLIVE OIL

Clean then blanch the escarole for 1 minute in filtered water. On low heat, saute’ olive oil with garlic and red onions. Add the cooked escarole to the garlic, olive oil and red onions. Add lemon juice to pan. Optional add slices of fresh lemon. When the escarole starts to wilt remove from the heat. SEASON, SERVE AND ENJOY!
