DELICIOUS LINGUINE WITH CLAMS /HOW TO MAKE LINGUINE WITH CLAMS : BEST PASTA RECIPE
EXCELLENT! easy, quick, and very flavorful. LINGUINI with CLAMS.

INGREDIENTS
1 pound linguine pasta
2 pounds Littleneck clams (40 to 45), scrubbed
4 tablespoons extra-virgin olive oil
1 bulb of Garlic garlic, thinly cut
1/4 cup of white wine vinegar
1 stalk of lemongrass
1/2 cup of Cherry tomatoes
2 tablespoon of red pepper flakes
1 cup of leaf parsley, finely chopped
1 tablespoon unsalted butter
Black ground pepper and salt to taste

INSTRUCTIONS
In a large pot over high heat, bring 4 quarts of water, 2 tablespoons of salt and 2 tablespoons of cooking oil to a boil. Add the linguine and cook according to the package directions (the pasta should still be firm to the bite since it will cook another minute or two in the sauce).
Meanwhile, in a very large sauté pan over medium-high heat, add the olive oil and 1 tablespoon of unsalted butter. Next add the garlic and lemongrass. Sauté until just brown, about 2 minutes. Then add the cherry tomatoes and after the manila clams simmer for 2 minutes. Add the ¼ cup white wine vinegar, bring to a simmer and cook, then add dried red pepper flakes, freshly ground black pepper and salt to taste. Moving on, the linguini tossing occasionally, until the pasta absorbs most of the sauce and is just tender, 1 to 2 minutes. Lastly, add 1 cup of the parsley. Enjoy
