These soft Italian-style cookies are a hit with everyone. The ricotta keeps them moist and the baked cookies freeze so well. Do not freeze the unbaked dough. You can decorate them with sprinkles.
Ingredients-
All Purpose Flour – 1 1/2 cups
Sugar – 2/3 cup
Vanilla Extract – 2 TSP
Baking Powder – 1/2 TSP
Salt – 1/4 TSP
Egg – 1
Unsalted Butter – 1/3 cup, softened at room temperature
Ricotta cheese- 1/2 cup
Lemon Zest – 1 lemon
For the Glaze:
Sugar – 1 cup
Lemon Juice – of the lemon we zested
Notes:
Preheat the oven to 375 degrees.
Bake the cookies for 14 minutes or until golden brown on the edges and at the bottom.
Cookies will be soft.
Allow them to cool completely before glazing.
