Chef Nikhil Chib’s Chicken In Banana Leaves

INGREDIENTS
2 stalks lemongrass (strip off the tough outer leaves and cut off the bottom root portion)
2 teaspoon fresh garlic, peeled
10 gm galangal (thai ginger)
10 gm fresh ginger
1/2 cup oil
3 teaspoon sugar
3 teaspoon salt
150 gm chicken (preferably the leg)
1 tablespoon soya sauce
1 tablespoon cornflour
METHOD
Take a bowl and add the chicken, lemongrass sticks, garlic, oil, chili, cornflour, salt and sugar, galangal, fresh ginger and soya sauce and mix well. Keep the chicken in this marinade refridgerated for an hour.

Take banana leaf and put one piece of chicken inside and wrap it while closing it with a toothpick and steam for approx 6 minutes. The chicken in banana leaves is ready to go!
